The whole thing with returning it to zero is so it doesn't wear out the spring inside. If you think about it, if you return it to zero, then need to use it, the spring has not been compressed and will tighten to what it should be. If you leave it at say 100 ft/lbs, then go to use it at 75, or any number for that matter, the spring has been compressed this whole time which tends to wear it out faster and make it not read true.
