It was a one owner, an old lady. So i suspect the engine bay has never been cleaned. I have absolutely NO experience in cleaning under the hood.
Surely a few neat-freaks around here can educate me.

yeah just be sure to cover up anything you dont want wet to be safe and dont use a hard stream of water, then following the steps roushstage2 posted it should turn out great

I don't think I've seen any of the professional detail products in any stores. Do any major stores sell that specific line? Do I have to order off the site?

I thought APC was a professional product.
Anyways, last time I was at my local shops they had;
simple green, super clean, some purple stuff, and citrus based degreaser
I'd rather not use the citrus, for the paint's sake.

I have used Simple Green as well. Dilute 4oz. to 32oz. water for a medium duty dilution. No matter which APC you use (Super Clean and Purple Power are degreasers IIRC, not APCs), you have to watch getting it on the paint as it can strip wax.
I used the degreaser in the purple bottle you find at Wal-Mart, AutoZone, etc., assortment of brushes (mostly used a toothbrush, though) and a lot of passion. About 1.5 hours and a misting of M40 later and it looked pretty darn good!

Scratch that dilution. Not sure why they changed it on the website, I just found the chart I saved (thought it was high). Medium dilution is 1 quart of water mixed with 1 oz. Simple Green.

It could be you're looking in the wrong kind of auto parts stores, (there's two kinds, one usually has a huge neon sign and is located on the main drag, this is a Hard Parts store and the other usually has a very small sign and is located in the industrial area or in an out of the way place, this is called a PBE store, PBE stands for Paint, Body & Equipment. It is the PBE store that is going to carry our Professional Line including our Professional Detailer's Line.
Remember, if you don't see the product you want but you see just one other Meguiar's product on the shelf, that means they can order it for you and usually have it the next day.
