It's probably clear coat. Once you start polishing the paint, if you look at your pad and it has color from the paint, it's single stage. For example, my dad's truck is single stage black and my pads are totally black after a few minutes of polishing where on my clearcoat cars they never pickup any paint, just dirt and grime.
By the way, I'd suggest yellow pads for both of the products mentioned above (UC & M20). For M21 and s100, you might prefer to apply by hand. It won't really change the effectiveness of the waxes applying by hand vs. machine, but most people like applying last step waxes by hand.
