    The ask and answer thread had a suggestion to start a MOL cookbook so let's get things rolling! Post up your favorite recipes... appetizers entree's desserts anything you love to cook up for yourself or loved ones. Here's my chili recipe.

    You will need a crock pot of decent size and a whole afternoon to let the chili cook.

    Ingredients:
    2 lbs hamburger
    2 or 3 8oz cans tomato sauce (2 if you like thick chili 3 if you like it on the smoother side)
    1 can Bush's baked beans (I use Original) think it's the 16oz can
    2 12oz cans chili beans (pinto or kidney beans if you can't find "chili" beans)
    2 12oz cans diced or crushed tomatoes
    1 tsp each of cumin, paprika, chili powder, garlic powder, cayenne pepper, and onion powder
    2 bay leaves
    Something to give some heat... I mix it up here but for simplicity's sake see if you can find some hot chili oil... I usually find it in the asian/ethnic foods section. You can use your favorite hot sauce or even chop up some jalapenos or habaneros (or any hot pepper) and toss them in this part is totally up to you!

    Start by browning and draining the hamburger. Throw it in the crock pot. Throw in all of the canned ingredients (minus the cans of course) juices and all no need to drain any of those. I would suggest only using 2 of the 8 oz cans of tomato sauce to start. Add in both bay leaves and HALF of your seasonings (1/2 teaspoon each). Stir it all up. If you need to adjust how thick your chili is now is the time to do it, adding another can of tomato sauce (or some beer or apple juice or whatever your heart desires) if you want to thin it a little. Also give it a taste and adjust the heat. I usually add in some extra cayenne and introduce whatever "heat" ingredient here. The hot chili oil is potent so if you are using that add a little at a time and taste until it's almost where you want. Set the crock pot on LOW and let it simmer for 3 hours, stirring every once in a while. After 3 hours add in the other half of your seasonings and also adjust the heat again if you need to. Simmer for 3 more hours. Voila! Serve with your favorite chili condiments. I prefer shredded cheese and sour cream. You can make this chili as mild or as hot as you want. Cayenne does add heat but to me its not a flavorful heat... it is the heat that catches up to you as you are eating (not a bad thing) but I do like some flavor with my heat and the hot chili oil or some hot peppers do the trick nicely!

    Oh and don't forget to fish out the bay leaves before serving they are quite bitter if you bite into one.

    Awesome Coleslaw !

    This is a huge favorite around the firehouse.

    2 bags of Dole coleslaw (or similar size, thats just what I use)
    1 bottle of Poppy Seed Dressing (be sure its sweet, I prefer the Kroger brand)
    1 bag of Craisins (original)
    1 small bag of sliced almonds

    Mix all ingredients together and serve, it seems so simple but it really is the best coleslaw ive ever had and i really dont like coleslaw.

    Just try this once, you will be hooked.

    FYI- you can substitute strawberries for the craisins if you choose.
    Never take life seriously. Nobody gets out alive anyway.

          I'm not that great a cook.But I make good indian curries.Homemade garam masala....not the powder from supermarkets.


          If anyone wants a recipe for indian food...let me know.

              This is just a medium style curry,for 3-4 people.This is a very basic explanation.There are many methods involved.These would take different threads to explain.(I like to use a medium size,non stick pan)

              Ingredients:

              -Basmati Rice
              -Ghee(clarified butter) or vegetable oil.
              -Onion Puree or 1 finely chopped onion/2 pieces of fresh garlic/a small piece of chopped ginger(or a teaspoon of ginger powder).
              -Half a tin of tomato puree.
              -2 or 3 tablespoons of natural yogurt.(I sometimes use a little coconut yogurt,as I can't find cream of coconut here).
              -One good size chicken breast(cut whatever way you like.Strips/cubes).
              -2 or 3 fresh green chillies(make a small cut to release the flavour,but not the seeds).

              Spices:1
              All teaspoon

              -Turmeric
              -Cumin
              -Coriander
              -Paprika
              -Garlic powder
              -Chillie powder...If you want more strength.Optional

              Spices:2

              -Garam Masala
              -tablespoon of fenugreek leaves or fresh coriander if you have.

              Cooking method:
              Have evrything ready so you don't burn.

              -Add 2 tablespoons of ghee or veg.oil to the pan and the fresh chillies.
              -Start off with high heat.If you are worried about burning,use a medium heat.
              -Once the oil gets hot,add the onion puree or the chopped onion/garlic/ginger.
              -Keep the pan on the move or keep stirring to avoid burning.
              -Add spices 1 and keep stirring for about a minute(Bhoona) .....Important-Be carefull at this point.Don't let it stick.If you burn the powders,they will taste ghastly.
              -Reduce the heat to minimum.
              -Add half a tin of tomato puree
              -Add the yogurt
              -After a few minutes.add spices 2.
              -Add a tablespoon of tomato Ketchup and a pinch of salt.
              -If it's a little dry,add a couple of tablespoons of water.
              -keep simmering and stir from time to time.

              Cook your pieces of chicken in another pan to 'seal' it,then add it to the sauce.

              Leave simmering while you do the rice.

              This is very basic.There is a lot to learn in indian cooking.Plus variations in cooking methods.

              If you need to know any of these,let me know.

              -How to make clarified butter.
              -How to make onion puree.
              -How to make Garam Masala.
              -How to marianate chicken overnight.
              -How to make fried rice.(coloring is optional).

              Go easy on the chilli the first time you make this as it might be too hot if you are not used to this.You might want to omit the powder.

              A good drink that'll kill heat:

              In a glass,add about a quarter of yogurt,then a quarter of milk,then fill the rest with water and ice cubes.Add a teaspoon of sugar.You can add a couple of drops of rose water,if you can get it.

                That looks awesome Eddie! Just reading the recipe is making my mouth water! To make clarified butter you just melt it down and skim the milkfat off of the top right?

                  Yes Mark.That's correct.I normally do it on low heat.Takes about 35-45 mins.It's optional,but I like the flavour.

                        I once put swirls in my paint just to see what it looked like.

                        I don't always detail cars, but when I do, I prefer Meguiar's.
                        Remove swirls my friends.
