Do carburetors have a break in period? Since it is a carb how often should I start and run the car to keep gas from gunking the carb up?

If it is going to be sitting for extended periods, put in some fuel stabilizer, fill it up with gas (always, always add any cleaners, stabilizers, etc. to the tank before you fill up, and only when you fill up), and then run it for a bit so the gas with the stabilizer gets everywhere it needs to be.
As for as break in, if there is a need "break-in" period, it will (should) tell you in the instructions...I say put the pedal to the metal.

The above comment is good, however, on storage. If you drive your car weekly, it should be fine, unless the miles driven are very low (under 50).
In that case, or less frequent operation, you should use a fuel stabilizer (e.g. Sta-Bil) which prevents the fuel from degrading and chemically changing. In the old days, they used to say the gas turned to varnish (technically incorrect but descriptively accurate); where the fuel turns gummy and can cause problems.
