what excactly is the difference in the two step product of gold class leather cleaner and the all in one gold class leather conditioner and cleaner gel? I've used the spray which is fine for quick touch ups put the gel does a better job IMO. is the two step better, or is it just so you can condition when needed with out cleaners?
also do either of this have any uv protection? couldn't find it on the bottle.

Good questions 2000 (You always ask good questions)

The Gold Class Rich Leather Aloe Cleaner is a dedicated leather cleaner for when you need extra cleaning strength. A good example would be if your were to purchase a used car with a leather interior that the previous owner neglected.

The Gold Class Rich Leather Aloe Conditioner is a dedicated leather conditioner and protectant for use on leather that has been previously cleaned using a dedicated leather cleaner, of for use on leather that has not yet become dirty. An example would be a brand new car with a leather interior. Because it's brand new, it should be clean, and it shouldn't require the use of a dedicated leather cleaner.

Both of these products are formulated and targeted for specific conditions and dedicated procedures.

All of the Meguiar's leather products contain UV protection except the Gold Class Rich Aloe Cleaner and that's because it is intended to followed with by a Meguiar's protection product.

Here's an application tip: When applying leather cleaners and conditioners, use a clean, foam applicator like the Meguiar's W-0004 foam wax applicators. Saturate the foam on the end of one side with product, and then apply the product using the foam applicator. The foam applicator will help you to spread the product out and work it in. By pressing down on the foam just a little, you can release more product. Reapply product to the foam as it is released to the surface. By first applying to and saturating your foam pad with product, you can avoid putting excess product into seams, stitching and holes.

my folks spent 20 years of their life disagreeing with that statement.

so for seats that stay in good condition, is it better to go with the conditioner alone, or is there no harm in using the cleaner / conditioner combo ( g-7214) over and over?
