I bought a bottle of this High Gloss Polish and it does give the boat a nice shine. I'm a little confused about this polish vs wax thing. Should I still wax the finish after I polish the boat?

A polish provides little to no protection so yes you should apply a wax after a polish. The polish introduces oils back into the paint/gel coat and helps enhance the color but you need to 'seal' it in with a quality wax.
Why Meguiar's recommends polishing paint - this is for paint but its still good reading.
