With a surface/ambient temp of 50-55F, you should be fine to wax. I'd say that a "minimum" temperature would be somewhere around an ambient/surface temp of 40F; I've successfully waxed at 45F before with no problems.
Due to the nature of running a mobile detailing business, I have been out there polishing and waxing in temps that are basically just above freezing. As long as the vehicle is parked in direct sunlight, which helps to warm-up the surface and it's a clear dry day, I have really never had a problem with product application or removal. Of course, I'm not really sure what's going on from a scientific point of view.
Ideally, you should always try to work at temps that are within the range of products specs.
