I have a Meguiar's G110v2 dual action multi speed polisher. It was a gift and hasn't been used on my car yet. I was wondering however if this could also function as a sander (with the right pad of course) for sanding off old wooden cabinets and refinishing them ? If so is there a recommended pad and speed setting

I don't see why not. The original Meguiars G100 was a re-purposed Porter Cable 7424, which was designed for sanding, not car polishing. You should be able to use the G110v2 for sanding with the proper backing plate, but I would wait on a more authoritative answer from one of the mods or admins.

and sanding disks of various grits. be sure to buy the correct diameter to match your backing plate.
As for the speeds, you can probably run a search for an owner's manual on Porter cable's website.
Their polishers are still sold as sanders and they would likely have speed setting recommendations
