Thinking Ultimate Black Plastic Restorer for the flares. Can I use it on the top or is there something specific for that? Also have some Endurance Gel but that's for tires.

If the trim is faded and needs restoration, look into solution finish. You can use ultimate black on top of solution finish as well.
On the vinyl top, M40 Vinyl & Rubber Cleaner & Conditioner would be a good option.
