Actually, very few clear coats are lacquer based. All currently available factory clears are urethane, polyurethane or similar multi part catalyzed systems.

What's the difference? Is one better than the other? I know with my paint color the factory does some ridiculous number of clear coat applications. I think the dealership told me it was 6-7 apps of the paint (its red) and 4+ of lacquer clear coat.

Good chance the dealer is mistaken about the "lacquer clear coat" portion of the description about the painting process of Ford's Candy Apple Red. Many car companies are doing specialty paints these days, in varying degrees (think back to the "Mystic" chameleon paint Ford offered several years ago, or Chrysler's 3 step "Inferno Red") but they are still modern, catalyzed urethane clear coats (poly- , acrylic - , etc but still a cross linking catalyzed paint).

Lacquers are generally what you had with the older single stage paint systems that used to be the norm. Even Lexus, who still makes a single stage black, is not using a lacquer paint in the application.

I miss some of the chameleon. It's easily over done and sometimes downright gaudy but the color shifts like the burnt orange were really eye catching.
