For the exterior metal trim, grille, badges, logos, exhaust, etc. do you guys just use wax like NXT 2.0 to bring out the shine or do you use something like the Hot Rims Mag and Aluminum Polish?

If it is metal. I use the Hot rims mag and aluminum polish. If it is the plastic chrome. I use a regular wax.

I didn't know you can apply wax to the plastic chrome..

If that's the case, why do I see pictures with people taping off the emblems and such?

To protect them from cleaner polishes and compounds. The abrasives could mar the chrome, scratch or dull plastic chrome, or leave hard to remove residue behind.

Waxes have no abrasive properties, so it's generally safe to use them on those surfaces

Ohhhh, makes sense! Alright, looks like I'll be waxing my emblems and chrome trim as well next week!

CC beat me to the answer. I regularly apply a thin coat of wax to the plastic chrome. Never had any issues whatsoever.

I've been using Metal Armor from Metal Armor Polishes in the past, expensive but it will give you great results,

once I got myself into more precise detailing about 1-2 years ago I decided not to order any more of Metal Armor, use what I got and then switch to Meguiars stuff which is good as well.
