Which 1? - Quik Detailer, Ultimate, NXT Gen Speed?
Could someone clear up the differances between these 3 products, and which is the better one, and can either of the 3 be used with a clay bar?

NXT Speed Detailer is underrated IMHO. It is a very good all around detailer. It's good at cleaning, leaves a moderately slick surface and can be used for claying. I've also used it for removing residue from machine polishing. It works very well on fresh water spots as well.
UQD is good for dust removal, and adds high gloss and slickness. However it is too slick to be used for claying.
Quik Detailer is inexpensive and would be my first choice for claying. It does not leave as slick of a surface and doesn't add to protection like NXT and UQD.

Focusing on the Consumer products, you would basically want to have Quik Detailer or Speed Detailer for claying (I would choose QD), and then UQD for when you are removing dust, wanting to leave a bit of a coating behind, that sort of thing.
As Zach mentioned, if you find you are using a lot of product, the Pro/Detailer lines have other options.
How does Last Touch compare to the consumer stuff? The price for 1 gal is great, but I don't know what I'm getting.
Last Touch is great. I've been using it for over a year and my finish looks fantastic. As a matter of fact, I'm quite sure that Last Touch has the highest lubricity of all Meguiar's quick detailers period. This means Last Touch is the best choice for QDing and preventing swirls. Plus, you can always dilute it 1:1 to use as a clay lube.
LT is a lot like Meguiar's Quik Detailer in my opinion. It doesn't have all of the protectants or hydrophobic technology like UQD but it's a great quick detailer.
