I have a 99 ford mustang and 01 escape, the escapes leather feels softer than the mustangs, how can I tell if both are real leather, or imitation or what so I know which product to use and not make the seats greasy..

Many cars have leather seating surfaces, which means that the parts where your back and butt touch are leather.
On the Fords you mention, as well as many American cars, the leather is generally low grade material.
On Lexus, Infinity, Toyota, Nissan, BMW, Audi, Mercedes, etc it is usually high quality leather all around the seats (no vinyl).
However, another execption to that rule,is that Mercedes does use what they call MB Tex on all their C,E,ML,GL,CLS classes unless they have the leather option.
On the CL,SL,S classes it is leather, but there is a nappa leather option available (which is oh so soft!!)
So, after my ramblings, On the luxury marques it is usually leather, on the daily driver marques it is usually leather and vinyl.
The vinyl is usually tight, thick and hard while leather is usually softer, has some give or plushness.
Or, you can always smell the upholstery...............
