I have a 2001 Mustang GT with the factory 17"wheels. Any suggestions on polishing them? Should I use a product like a metal polish or should i use a regular wax, ie NXT 2.0?

I believe the 17" wheels were an option in '01, which would make them the Bullitt style wheels? Use the NXT.

Just to add, if they are clearcoated, you can use clay, a cleaner, and/or cleaner wax as well to help get them clean.
