what are the differences between.. say.. M21 and NXT 2.0? or UQD vs. M135? Are there advantages of going with the mirror glaze counterparts?

Re: It may be obvious and i'm missing it..
As roushstage2 stated, the primary difference between NXT 2.0 and M21 2.0 is that the M21 product is formulated so that it can be applied using a rotary buffer. Applying waxes with a rotary buffer isn't usually a good idea if you're looking for a flawless, swirl free finish but in the "Detailing Industry", most detail shops place speed as their top priority not quality and applying anything with a rotary buffer makes the job fast and usually makes the paint shiny, (shiny doesn't mean swirl free).
The UQD and the M135 are the same formulas as far as we know but what most people don't understand is the refinishing industry is a different industry than the consumer retail industry thus our Professional products have a dedicated distribution system that is different than the distribution system for consumer retail.
There's not just one truck, one warehouse and one store. Meguiar's has been a supplier to the refinishing industry since the refinishing industry has been around, simply put, the refinishing industry didn't become a reality until enough people purchased and then wrecked their Model-T's to create a demand for someone to slap on a new fender and then paint it, or refinish it and for this process they needed paint care products that were safe for fresh paint, (That would be our Professional Line, not our Consumer Line).
Meguiar's started in 1901 and the Model-T didn't go into production until 1908, so we've been catering to the refinishing industry since became an industry.
While there were cars around since 1901 and even before that, it wasn't until Ford introduced the Model-T in 1908 and increased the wage to his workers to $5.00 a day, (not $5.00 an hour), that the people building the cars could actually afford to buy the thing they were building, this acted to jump start mass car ownership and simply put transition our society from a society that rode horses or rode in buggies pulled by horses to the horseless carriage.
The Model-T was built from 1908 to 1927 and in that amount of time over 16 million cars were built and sold, thus it was the Model-T that transitioned us from horses to cars and Meguair's was around before the Model-T so in a way, Meguair's was around before the average person owned a car.
Just a little perspective...

great write-up mike thanks! I just really didn't know if there was any MAJOR advantages to the MG stuff over the consumer stuff... well ... when it comes to those two products. I think 'ill just stick with NXT 2.0 and UQD, its a little easier to obtain.
