Why does one use the W7006 pad for the MF bonnet?

Well, you can use any of them. However, the 9006 pad is so soft, it doesnt always keep the best contact with a bonnet on for removing product.
The 8006 and 7006 pads are firmer, and keep good contact with the bonnet on. Just a matter of which firmness you find easier to work with. A lot of people seem to like the most firm, 7006.2017 Subaru WRX Premium - WR Blue

Murr1525 is correct, it's the extra firmness of the pad that enables the bonnet to remove the wax, (move something, i.e. the wax), versus the bonnet and pad just squishing in, (wax stays in place and foam moves)
The best way to understand is to try for yourself using clean pads to remove wax with clean bonnets.
