Last Touch is extremely slick and also has some gloss enhancers that add a little something extra to the paint. It can also be used 1:1 wwith water as a very economical clay lubricant (1 gallon=$20 which gives 2 gallons of clay lube which gives us $10 a gallon. A 32 oz. Quik Detailer is $8.99 at Autozone.)
Final Inspection is Meguiar's only body shop safe quick detailer. It can also be used at full strength for claying.
I would go with Last Touch since it is more economical and versatile.

I can only speak about Last Touch. I find it is a very good QD. Economical, does a fantastic job, and the fact that you can dilute it 1:1 for a clay lube is great. Also nice to have the gallon size. Lasts a long time.
I personally prefer last touch full strength as i think it gives incredible gloss. As far as claying goes i just use some water with a little car wash soap and save some money with the lubricant.
It actually depends on what are you going to use the QD for. FI is great, especially if you work on a body shop. However, for me I prefer Last Touch because of the finish it gives you and its versatility. It is also cost effective as a clay lube.
I use Last Touch for emergency bird bombs and other contaminants that need special attention. But I do not use it as my regular detailer, as I seem to have problems with streaking, at least on my black car. I have found that diluting it 1:1 seems to reduce the streaking, but I still prefer two other products: (1) Ultimate Quik Detailer--I use this on my wife's CR-V, which is dressed in Ultima Paint Guard Plus. UQD seems to work very well with UPGP. (2) Finish Kare 425--I use this on my black S2K. It cleans the surface well, does not streak (usually), and adds a touch of slickness. 425 works especially well with Blackfire Wet Diamond, my favorite synthetic sealant; but I use it with all my waxes and so far have not experienced any incompatibilities.
I do have a bottle of Final Inspection and I use it to help remove polish remnants.

What constitutes a professional detailer?
Would you consider me a pro? I've washed about 2500 cars (retail clients) taken a DA/polisher/rotary to over 1000 cars in the past five years.... I still post some newby questions on this forum every once in a while with new products ...but Does that make someone a pro?

"engaged in a profession or engaging in as a profession or means of livelihood"
I believe perhaps Nick's question to J.A. might have been better asked by saying are you an expert or other highly qualified individual? Of course J.A.'s level modesty would determine the answer. Just check out his rep power rating, it speaks for itself.
I think the word professional means the same thing in most cases, but like all things there are different levels of professional. Like this sentence, "...the professionals at the dealership instilled swirls in the car..."
Often quotation marks will denote sarcasm or distain. Again, this quote, "...the "professionals" at the dealership instilled swirls in the car..." indicates although they get paid for what they do, they don't do it well.
Where is Star Kicker on this matter...? He would have the car detailing definition of "professional".
Back on topic, I found a gallon of Last Touch gathering dust at an auto store and I look forward to trying it as a claying lube diluted 1 to 1 with water.
