I have heard the oils in peanut butter work well, but I have never tried it. Well I have never had the need, but if I did I would try peanut butter.
You left out licking the water off. Oh, wait a minute, that's my cat, not my car. Uh, I mean my cat licks himself dry. I don't lick my cat dry. Or my car. -PC.
I've used Goof Off, then let it sit in the sun to soften the gum. After that a small, stiff brush to remove most of it, then just picked the rest out. This was on a floor mat, but maybe a hair drier could take the place of the sun.
Besides vegetable oil you could try Goof-Off, or Goo-Gone. The idea is to dissolve the gum using a safe oil/solvent and then after removing the gum remove any residue from the product you used to dissolve the gum.
Freezing the gum and then breaking it up and removing the most of it is the best option to try first as this will leave less gum to have to dissolve and then the least amount of overall clean-up to do afterwards.
Besides dry ice, which you have to be careful with and will require a little effort on your part to locate some and then drive to obtain it, you could just try some ice cubes placed on the gum and allow some time for the cold to transfer into the gum. We've used the ice cube trick with some luck, not perfect but it did help.
Most important is to remove the gum as quick as you can before it becomes more worked into the carpet.
