My car is black with metallic. It's a factory clear coat I was thinking of trying a polish. I just want a polish as right now I have no real defects. Is there a polish that doesn't stain available. I'll be working by hand.

Ultimate Polish is an excellent choice here, but if you get it on black plastic or vinyl trim and allow it to dry, you will most likely see some staining. But if you just pay attention to what you're doing and immediately wipe off any that might get on those trim pieces, you shouldn't have any issues at all. Keeping a clean microfiber towel at hand so that you can do just that is a good idea, even if you use some masking tape to cover that trim first.
