In my opinion... The professional products will give you better results. Some of the consumer products might be easier to use. I've made the switch to professional products just this summer and I will not be going back for sure. Also the professional line offers more choices and uses.
I think the pro line is also geared more for machine application, PC or rotary. Where the consumer line can be used by hand or PC. Both lines have great products for different applications, have a combo of both in your detailing arsenal and you are set!
As the others said, it doesnt really matter which you choose, all are meant for different applications. So dont be scared off of a certain product just cause of the label, just give us an idea of your situation, plan to work by hand or machine, and you/we can mix and match what you need.
With the right amount of skill and knowledge I think that one can achieve very good results with the professional line. That said, any joe shmo can get great results with the consumer line even with limited knowledge in application and use.

The pro line has a much broader range of products, and many of them are far more aggressive than anything in the consumer line. My understanding is that if you release a very aggressive product to an untrained public you set yourself up for a lot of problems: people using the wrong product for the job, using product in an incorrect manner, people's expectations being unrealistic primarily because they don't fully understand the process, etc.
Much of the pro line is also body shop safe, and it needs to be because that is the intended audience for it.
