Raul, I would recommend any Meguiars brand car wash. They all basically do the same thing, which is provide a PH balanced wash and is gently enough to preserve the clear coat and wax. My favorite is Meguiars Hyper Wash and Gold Class is second. Both are rich and thick. As far as water spots you may want to VERY CAREFULLY experiment with a little CLR. I have used it before with great results. I must caution that this should be done in the shade on a completely cool surface after it has been washed.
Technically the correct way to remove water spots is using the right pad and product combo on a DA Polisher or possibly rotary if you wanted to get serious and depending on how serious they are. In cases of heavy water spot etching Rotary polishing was the only way I could fully remove them. Polishing is limited to glass and painted surfaces only, which is why CLR is often needed if you have it on wheels, trim, or other areas that cannot be polished.

As a side note to your original post on wanting a glass smooth surface, you will need some sort of DA polisher to really bring out a consistent shine. Hand application is mostly reserved for small spot repairs using scratch X or a paste wax. Depending on your budget you may want to look into getting a small detailing kit to get started and if you have serious enough water spots you will pay for the buffer itself in how much you would have to pay most professional detailers to fully remove them. Autogeek offers the full line of Meguiars and has some pretty hand detailing start up kits with Meguiars products.

I hope this helps, happy polishing!
