No, you wont want to use any wax/sealant for at least 30 days.

Yes you need to leave it for 2-3 months to allow the fresh paint to fully 'cure'...
If you simply HAVE to put something over it, try some #80 Speed Glaze - it can be used on uncured paint and does contain a tiny bit of protection...
Double check with your body shop that did the work. After an accident last spring, I wasn't supposed to wash my truck for a couple of weeks after it was painted and they said not to polish or wax for 90 days.
The longer you wait the better. I would go with a minimum of 45 days.
Your paint has to out gas.

I would definitely use a car wash shampoo of some sort. For me, Gold Class is a good mix between being cost effective, having good lubricity, and being a good cleaner. Washing with plain water is going to just move dirt around for the most part leading to new scratches and swirls.
