Could someone explain to me the difference between these two products? I know that they have almost the exact same cut the difference being that M205 uses SMAT while M80 uses DAT. How much polishing oils does M80 have versus M205?

You just pointed out the major difference between the two: DAT vs SMAT. DAT products have a limited play time. The micro-abrasives break down or diminish (Hence the DA in DAT) after a certain amount of polishing
SMAT products have a much longer play time and the super micro-abrasives (The SMA in SMAT) do not break down, so the detailer can spend an inordinate amount of time polishing as long and slow as the panel being worked may dictate.
I've read from other members that M80 has the edge in polishing oils and is better suited for single stage paints, although either M80 or M205 can be used on SS or clear coat paints. Despite the exact same level of cut, I think that M80 may actually be slightly less aggressive tham M205.
